একমুঠো বাদামেই সব পুষ্টি!

ইংরেজিতে ‘Nuts’ শব্দটি দিয়ে খুব ভালো কিছু বোঝায় না। বাংলায় অবশ্য তা নয়। বাদাম এখন পুষ্টিবিজ্ঞানীদের চোখে এক হিতকর, আশ্চর্য খাবারের মর্যাদা পাচ্ছে। দিনকে দিন বাদামের নানান পুষ্টিগুণ খুঁজে পাচ্ছেন তারা। গণ্য করছেন ‘লিটল ওয়ান্ডার অব নেচার’ হিসেবে। এছাড়া তারা একে বলছেন, সুস্বাস্থ্যের ভাণ্ডার বা ‘ট্রেজার ট্রোভ অব হেলথ’।

আসলে সব ধরনের বাদামই নানান পুষ্টিগুণের আধার। আমরা মাঠে খেলা দেখার সময়, বন্ধুদের সঙ্গে আড্ডা দেওয়ার সময় বাদাম চিবুতে পছন্দ করি। হালকা স্ন্যাকস হিসেবে সব দেশেই বাদাম খাওয়া হয়। এছাড়া খাদ্যে রুচি ও স্বাদ বাড়াতে বাদাম ব্যবহারের চল আছে। চানাচুরে বাদাম থাকবেই থাকবে। এমনকি বাদামকে ‘প্রসাদ’ হিসেবেও ব্যবহার করা হয়।

বাদাম কেবল আমাদের দেহে পুষ্টিই যোগ করে না, সেইসঙ্গে নানা রোগ-ব্যাধি থেকে দেহকে সুরক্ষাও দেয়। 
কী নেই বাদামে? আমিষ, ভিটামিন, ফাইবার বা আঁশ থেকে শুরু করে ফাইটোস্টেরল আর ফেনোলিক কম্পাউন্ড সবই আছে। বেশ কিছু বৈজ্ঞানিক গবেষণায় প্রমাণিত হয়েছে, নিয়মিত বাদাম খেলে হৃদরোগের ঝুঁকি কমে। দেহে ক্ষতিকর কোলেস্টেরলের মাত্রা কমে, কিডনিতে পাথর তৈরি হয় না, মেয়েরা ডায়াবেটিসে আক্রান্ত হওয়ার ঝুঁকিমুক্ত হয়।
